Ingredients
  

  • 1 lb 450 g cremini or button mushrooms, cleaned and halved
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme or rosemary optional
  • 1 tbsp balsamic vinegar or lemon juice optional, for flavor boost

Method
 

  1. Preheat Oven
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Season Mushrooms
  4. In a bowl, toss mushrooms with olive oil, garlic, salt, pepper, and herbs (if using) until evenly coated.
  5. Roast
  6. Spread mushrooms in a single layer on the baking sheet. Roast for 20–25 minutes, stirring halfway through, until golden and tender.
  7. Finish & Serve
  8. Drizzle with balsamic vinegar or lemon juice before serving for extra brightness. Serve warm as a side or over steak, pasta, or salad.

Notes

Don’t overcrowd the pan — mushrooms need space to brown, not steam.
Use a mix of mushrooms (shiitake, portobello, cremini) for more depth of flavor.
